For the past couple of years my mother has been making this delicious bean and tuna salad and I finally got her to sit down and write out the recipe for me. It is really easy to prepare and once you have it made, you will need to chill it for 2 to 4 hours before serving it.
Bean and Tuna Salad Recipe
1/2 cup green onions, chopped
2 tsp. lemon rind, grated
2 tbsp. basil
4 tbsp. fresh lemon juice
2 tbsp. white wine vinegar
2 tsp. olive oil
2 cups cherry tomatoes, quartered
2 (15 ounce) cans cannelloni beans, rinsed & drained
1 (12 ounce) can chunk white tuna, drained & flaked
In a large mixing bowl combine together the first 6 ingredients, stirring well. Add in the cherry tomatoes, beans and tuna. Toss to gently mix everything together. Cover the bowl and refrigerate for 2 to 4 hours before serving.
