Amish Style Apple Pancakes Recipe

Living here in Pennsylvania, we often come in contact with local Amish or Pennsylvania Dutch people. About 25 years ago, this recipe was given to me by a local woman. To this day, this is one of our favorite pancake recipes, especially during the fall cooler months of the year.

Amish Apple Pancakes Recipe

2 apples, peeled, cored, and sliced
1 cups all-purpose flour
1 cup milk
6 eggs
1 teaspoon vanilla extract
1/4 teaspoon table salt
1/4 teaspoon ground nutmeg
2 tablespoons butter or margarine (we use butter)

In mixer or blender, beat flour, milk, eggs, vanilla, salt, and nutmeg; set aside. Heat oven to 475 degrees. In cast iron skillet for 5 minutes, add 2 tablespoons butter; melt. Add sliced apples and fry 2 to 3 minutes. Pour mixture over apples. Bake at 475 degrees for 15 minutes. Reduce heat to 425 degrees for 8 to 10 minutes. Sprinkle with powdered sugar. Cut in wedges.
