Coconut Pound Cake Recipe

Today I am sharing with all of you another vintage recipe that I saved from my great aunt's box of recipes that she has stashed away for the past 25 years or so. I am adding this one to my "baking list" and going to try making it later next month when we are entertaining some friends and family.

Coconut Pound Cake Recipe

3 cups all purpose flour, sifted
1 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 1/2 cup vegetable shortening
2 1/2 cups granulated sugar
5 medium eggs
1 cup frozen coconut
1 tablespoon coconut extract

In a large mixing bowl sift together the all purpose flour, baking powder and salt. In another mixing bowl cream together the milk, vegetable shortening, granulated sugar and the eggs. Stir in the frozen coconut and the coconut extract.

Preheat oven to 350 degrees F. Pour cake batter into a lightly greased pan and bake for 40 to 45 minutes or until done. Remove from oven and let cool in the pan before removing it.

Watch your cake closely, according to my aunt's notes...sometimes it bakes up in 30 minutes and at other times it takes 50 minutes. Not sure why but she made those notations on her recipe card.
