Homemade Zucchini Bread Recipe


I am really looking forward to getting our garden planted this year and getting some large zucchini's out of it. For some reason, I can grow zucchini's really well! One of the recipes that I like to make that utilizes fresh zucchini's in this homemade bread recipe.

Zucchini Bread Recipe

3 large eggs
1 cup brown sugar
1 cup granulated sugar
1 cup vegetable oil
2 cups peeled, grated zucchini
3 cups all purpose flour
1 tsp. salt
1 tsp. vanilla extract
1 tsp. ground cinnamon
1 tsp. baking powder
1 tsp. baking soda

In a large mixing bowl, beat together the eggs, brown sugar, granulated sugar, vegetable oil and vanilla extract. In another large mixing bowl, mix together the all purpose flour, salt, ground cinnamon, baking powder and baking soda. Beat the dry ingredients into the wet ingredients until well combined.

Lightly grease two loaf pans with Crisco or oil. Divide the batter and pour into each of the loaf pans. Preheat oven to 350 degrees F and bake for 50 to 60 minutes or until bread is done. Remove from oven and let cool.
