Homemade Pierogi & Lasagna Casserole Recipe

My neighbor made us a homemade casserole and brought it over a few weeks ago when I came home from the hospital from my hip surgery. I had never heard of a Pierogi & Lasagna Casserole before but once hubby and I tried it...wow...we were really missing out! Anyway, here is the recipe which she included with the casserole.

Optional: You can substitute with instant mashed potatoes if you are in a hurry and it's a weeknight & dinner needs to get onto the table.

Homemade Pierogi & Lasagna Casserole Recipe

10 to 12 large potatoes, boiled and mashed
3/4 lb. cheddar cheese, shredded
2 sticks butter, softened
1 large onion, finely diced
1 lb. lasagna noodles, cooked & water drained
salt to taste
ground black pepper to taste

Mash potatoes; add the shredded cheese, beat with a mixer until combined. Saute the onions in butter until fork tender. Add 1/3 of the sauteed onions to the potato mixture, salt & pepper to taste.

Butter a 13" by 9" baking dish. Layer cooked lasagna noodles and then mashed potatoes, repeat forming layers as you go....ending with lasagna noodles on the top. Pour remaining butter & onions over the top. Cover and bake in a preheated 350 degree oven for 15 to 20 minutes, or until heated through. Remove and serve.

How NOT to Pitch a Professional Review Blogger!!!

I own or co-own 7 highly successful blogs online and turned all of my blogs into businesses. All of my blogs are at least 3 years old with established readership and I am highly visible on several social media channels.

One of my businesses is that I review products and host giveaways for the same products that I reviewed on several of my blogs. I do not do any copy & paste, I insert proper keywords, I write in great detail and I promote the heck out of my professionally written reviews on numerous social media channels. I get companies a HECK OF A LOT business exposure.

I have been dealing with hundreds of PR and Media companies for the past 4 1/2 years. I would say that 80% of these companies are a real pleasure to work with and I have formed great relationships with them. These PR & Media companies appreciate the value of a professional blogger and what the blogger can bring to the marketing table.

With that said, about 20% of the PR & Media companies that I come into contact with are a BIG JOKE! Seriously, I get over 50+ pitches a day in my email box from companies here in the US and a few in Canada. I love working with companies & PR firms...but lately, I am getting really disgusted with the behavior of 20% of these PR firms.

Here is an example of what I have had to deal with in the past 3 weeks.

1. Hundreds of pitches of PR firms wanting me or my business partner to review products from sent .jpg images? Oh really!!! Hmmm, NO ONE can review a product from a high-quality image and be honest with their readers by doing that. Not only that...what is in it for the blogger? Nothing tangible at all.

2. Pitches roll in that offer one of us a product to review but....and yes there is a but...they want us to return it to them after the review!!! Sometimes this is at our expense and other times at theirs. What the hell? Again, nothing for the blogger's time, writing skills, social media pull, marketing efforts...etc. NOTHING!

3. We often get "pitches" that are labeled as "guest posts" and/or "story ideas" where they want us to give their client (the company) FREE advertising on one of our blogs by labeling it as a "story idea" or as a"guest post". What the hell is that about? Why not be honest and say "Hey, will you give my client some free advertising on your site?" Please quit disguising that junk as "guest posts" and "story ideas". Trust me...we are NOT desperate for content on ANY of our blog sites and we would rather give that CONTENT SPACE to a company who is compensating us with either a product or money. Get real folks!!!

4. We will get pitches saying "Can you post this for my client about their new product launch or sales promo and tomorrow I will ship out some products to you to thank you?" The problem with this is...we have been burnt WAY TOO MANY TIMES by never receiving the goodies!!! Oh yeah...people lie to get what they want!!! Well, we are now smarter about that!!!

5. I just love getting pitches from PR firms and companies offering to send me XYZ product to review for them, seriously...I love that!!! However...way too often these days when that product arrives to your home to be reviewed it is a sample one-time use packet of something! Wow...so the company can only send you a swipe pad or one-time use packet and not be honest with you that you are ONLY getting a one-time use sample? The reason they are NOT honest is because they know bloggers will NOT work for a .02 cent sample! Ugh!

I am really getting beyond irritated now with all of these unprofessional PR pitches hitting my email box each and every day!

PR & Media companies are being paid to push those press releases & pitches around...YES....getting paid! If you want to work with a professional review blogger who is also a professional ghostwriter with years of experience... well then...you have to offer me something in return! That is the bottom line!

Just like you all...I have a family to feed, a roof to put over our heads, medical bills to pay and so forth. Your ridiculous PR & Media pitches do NOTHING for me and my family!

Italian Slow-Cooked Stewed Chicken Dinner Recipe

Back in the good old days my Italian auntie used to make this recipe every 4th Sunday of the month. The funny thing is...we never got tired of eating it! Today, I am sharing a recipe with all of you that she brought over from Italy with her. It does take quite a long time to bake...but it's delicious once done! This recipe will serve 5-6 people.

Italian Slow-Cooked Stewed Chicken Dinner Recipe

5 lbs. stewing chicken, cut up
10 potatoes, cut into small chunks
2 medium onions, diced
2 cups celery, diced
2 tbsp. Parmesan cheese, grated
1 tsp. garlic salt
1/4 tsp. ground black pepper
1/2 cup tomato juice
water

In a large roasting pan layer the cut up chicken, potatoes, onion, celery, Parmesan cheese, garlic salt and ground black pepper. Pour in the tomato juice and enough water to cover the ingredients.

Preheat oven to 350 degrees F. Place roasting pan into the oven and slow bake the chicken dinner for 1 to 2 hours.

Our Summer is Coming to an End!!!

Wow, it's hard to believe but today is August 21st and that means that Summer will be coming to an end soon! Across the nation many kids have already went back to school and here in our area they head back on Monday. Wow, this Summer has really flown by and it seems like yesterday that I was moaning & groaning about Summer getting here after having a cool and rainy Spring.

Luckily for us...there is still a little bit of Summer left! We will be leaving on vacation soon and spending 10 days down at the Jersey Shore. Usually by now we have been down at least twice during the season but this year is different due to my hip replacement surgery back in late April and being on traveling restrictions.

We are really looking forward to our upcoming vacation as it will be our first one for this year. My mother, daughter, her fiance and our grand daughter are all coming along. They will stay with us for 1/2 of our vacation and then they will head home so that hubby and I can have some alone time. Yay for that!

In early October we will be heading to Gettysburg for a few days and then in early November we will be hitting Lancaster. We love touring areas here in our own home state and are looking forward to both of those mini vacations later this year. Perhaps we will throw a weekend in there some where to head up to New York City too!

This summer has been great because I have managed to stay out of the hospital (knock on wood) after having a long stay in there over the Christmas holiday and then a 5 day stay in April when I had my hip surgery. Hopefully, I can stay out of that dungeon for the remainder of this year too! (That's the plan).

While I am on vacation...keep checking this blog and my Travel Blog as I will be doing a lot of blogging on the things we are seeing, doing and enjoying down at the Jersey Shore!

Delicious Linguine Pesto Recipe

My husband and I are empty nesters now and I am always looking for delicious recipes that make just 2 servings for us to enjoy. This Linguine Pesto Recipe is really easy to prepare and if you have a larger sized family, you can certainly double and even triple the ingredients.

Linguine Pesto Recipe

1 tbsp. olive oil
1 sm. garlic clove, minced
1 1/2 tbsp. fresh basil, chopped
1 1/2 cups cooked linguine
1/2 tsp. to 3/4 tsp. salt
1/8 tsp. ground black pepper
3 tbsp. grated Parmesan cheese

In a large skillet, heat up the olive oil and minced garlic. Simmer for 2 minutes. Remove from heat and stir in the chopped basil. In a large mixing bowl combine the cooked linguine with the basil mixture, tossing to just coat all of the ingredients. Season with salt and ground black pepper. Sprinkle the grated Parmesan cheese on top. Serve immediately or refrigerate until serving time.

How to Properly Apply Eye Cream

We’re constantly being educated on the importance of eye cream, that if used on a daily basis we’re guaranteed to look refreshed, bright-eyed and youthful. However, do we really know how to apply it? What area of the eye do we focus on? Do we pat gently or rub in? When should eye cream be applied along with our other facial cleansers and serums?

SESHA Skin Care’s National Educator and licensed esthetician, Victoria Piotrowski, chimes in on how to apply eye cream in order to maximize results:

“When choosing the appropriate eye cream, it is essential to make sure it penetrates, not only to get the results you want, but also due to the fragile thin nature of the under eye skin. You should not use micro needling or other penetration methods around the eye in order to increase penetration. The product needs to be gentle enough, but efficient to get your desired results.”

Proper Eye Cream Application:


1) Wash face with a gentle cleanser.
2) Tone with a natural toner to balance the skins PH.
3) Apply any desired serums to the face, neck and décolleté, allowing them to completely absorb.
4) Now Comes the Eye Cream:

a. Using your ring finger, apply small dots around the eye, above the eye up to the brow bone area and under the eye.
b. Gently tap the cream in to stimulate circulation. Try not to pull or stretch the delicate skin around the eye. Tap until you feel it absorb. Pay special attention to problem areas when tapping cream in.
c. You can also gently massage in circular motions, but be mindful of not pulling at the skin.

5) Finish with a moisturizer and/or SPF during the day for protection.

Refinished The Old Water Fountain & Bird Bath

Last year my neighbors moved out and were going to haul off this old water fountain & bird bath to the city dump! It was in terrible shape with numerous cracks, chips and didn't run at all. Seriously, I wouldn't of paid $5.00 for the thing!!!

However, my hubby saw the potential and they gave it to him for FREE...gosh, I love free! Anyway, last month he finally had some extra time and spent an entire month restoring it...matter of fact, we are told that it's even prettier now than it originally was 25 years ago!
He purchased plaster of Paris, caulk, grout, an air & water pump and several cans of outdoor spray paint that is in a gray granite type of finish. After spending 4 weeks...he finally got it restores and wow...it's beautiful now! Seriously, all of the neighbors are now jealous with it sitting out in our front yard in one of our many flower beds.

We have been working on all of our landscaping since we moved into the house 8 months ago and our landscaping is all coastal looking (the parts we have re-done) and we are still working on it. We love this bird bath combination water fountain because the bowl portion looks like a huge scallop seashell...don't ya think?

This fountain is super heavy and it took 3 men with a dolly to move it from the garage up to the front of the house! I bet it weighs a good 75 to 100 lbs...I kid you not! It's super heavy and consists of 2 pieces! Anyway, it's done and in it's new place!

Next up...the new hydrangea bushes are going in next week and then later next month the 2 new blueberry bushes will be put in along with another raspberry bush. I am very pleased with how our property is starting to look!

Delicious Watermelon Slushie Recipe

Are you looking for some great tasting sugar-free beverage recipes? If so, you have got to try this watermelon slushie recipe from the great folks over at Cascade Ice. We made it a few days ago and they were delicious! They are the perfect slushies to finish out the summer season and especially now when watermelon is fresh & plentiful.

Watermelon Slushie Recipe

2 handfuls of ice
several chunks seedless watermelon
8oz Cascade Ice Zero-Calorie Blueberry Watermelon
6 oz. club soda

Directions: Combine the ingredients in a blender and process for 15 seconds. Then, pour in the club soda. Blend to desired consistency and enjoy!

Terrified of Severe Thunderstorms & Bad Weather


When I was a little girl I experienced first hand at what an F1 tornado can do and ever since that time I have been terrified of severe thunderstorms. While I am okay with regular thunderstorms, the severe ones with a lot of thunder, lightning, high winds, hail and tornado watches or warnings totally freak me out! Yes...freak me out!

I contribute all of this from my tornado experience as a little girl when my family and I crouched in a basement for over 2 hours in the dark while a weak tornado ripped a part our home. Once it was over...we climbed out and everything was gone...GONE!

We are very lucky that we all survived and none of us were hurt badly...just a few bumps, bruises and minor scrapes. Yes, very lucky and eternally grateful that the Lord spared us all and had bigger plans for each & every one us. For everyone who has ever been through one...please know...the Lord has bigger and better plans for YOU!

With that said...to this day the severe storms freak me out and I have to medicate with anti-anxiety meds every time one comes knocking on our door. While these meds help me get through the storm, I really wish I wouldn't have to take them. I have tried meditation, yoga and bio-feedback exercises but yet my anxiety continues when storms arrive.

One thing that has recently been helping me is noise reduction when storms hit. By that I mean this...when storms arrive, I put on noise-reduction earphones and play music through my iPod. I go into a room that has no windows (so I can't see what the weather is doing outside) and listen to soothing music until the storm is over. I have learned that if I can't see it and can't hear it...I can get through it without medication.

The only time I have been taking my anti-anxiety medication now is if we are out & about somewhere where I can't escape the sight & sounds of a severe thunderstorm. I consider that great progress & I am happy to have made it!

Perfectly Peach Bellini Cocktail Recipe


When it comes to enjoying a great tasting cocktail...I am all about the fruity flavors! If I had to choose 2 of my favorites, it definitely would be strawberries and/or peaches! The great folks over at Voga Italia sent over this Peach Bellini Cocktail Recipe for me to share with all of my blog readers. With the weekend just around the corner, I am going to whip up a few of these and sit back & relax. How about you?

Perfectly Peach Bellini Cocktail Recipe

2 medium sized peaches, peeled and diced
2 Lychees
1 Bottle of VOGA Sparkling
1 Teaspoon Lemon Juice
1 Teaspoon of Sugar

Directions: Puree peaches, lychees, lemon juice and sugar in a blender until smooth. Fill champagne flute a quarter full of the puree and then top off with VOGA Sparkling.

Easy Pan-Fried Trout - Fish - Recipe

My husband went out fishing with my brother last weekend and it was the first time he has been out fishing in over twenty years! Anyway, the two of them caught several nice sized trouts and once they got home...I got busy making dinner for them.Now, I will admit...I will NOT clean fish...nope, I will not! I made the guys clean & prep the fish before I would even touch it!

You can purchase store bought bread crumbs in the canister...however, I make my own and used mine. You can coat your fish fillets as lightly or as heavy as you would like it. We like ours lightly battered.

Easy Pan-Fried Trout Recipe

4 to 6 trout filets (depending on size)
1/3 cup seasoned dried bread crumbs
1 medium egg
2 tablespoons butter
2 tablespoons vegetable oil

In a large skillet, melt the butter and heat up the vegetable oil over medium heat. Rinse off the fish filets under cold tap water. Beat the egg with a wire whisk and place into a small bowl. Drudge fish filets through the beaten egg and then dip both sides of the filet into the seasoned dried bread crumbs.

Place filets into the butter & oil mixture in your skillet and pan fry each side for 3 to 4 minutes, depending on how thick your filets are. The outsides should get lightly golden brown. Remove from pan and place them on a paper towel lined plate for 2 minutes. Remove and serve immediately.

I love having a clean and organized home...matter of fact, I am pretty passionate about it! Some people would call me a 'clean and neat' freak and others would just call me plain crazy, but I absolutely love to clean my home! I take great pride in keeping a nice home for my family and I love to show it off when guests arrive.

Recently I had a total hip replacement surgery and doing my day-to-day cleaning tasks have become a real big challenge for me. I was sent a Swiffer Sweeper 2-in-1 Sweeping & Mopping Starter Kit to try out for all of you. I just love reviewing cleaning products, especially ones that make my life easier.

The Swiffer Sweeping & Mopping Starter Kit includes:

* 1 Sweeper
* 2 Dry Refills
* 1 Wet Refill

The dry cloth traps & locks in dirt which is good for dry mopping and sweeping. The wet cloth traps & locks in dirt deep into the cloth and is for your wet mopping to clean your floors. What is really cool is that those dry cloths leave floors up to 3X cleaner due to the way it traps & locks in dirt. I am all for that as I hate using a regular household broom with a passion!
One of the things I love about this product is the telescoping handle...you can adjust the handle length to the size that you need. The cloths are very easy to attach and remove from the sweeper/mop head and simply tuck into the little cut-out grooves.

I first started with my dry mopping (sweeping) so I used the dry cloth first. I took it into both bathrooms and did the floors and it did a fabulous job at picking up all that disgusting hair and dirt. When I was done...I couldn't get over how much hair & dirt it really picked up...OH MY GOSH...and I thought my floors looked clean before that! Geesh, I was missing a lot! Thank goodness I have this new Swiffer Sweeper!
After I was done in the bathrooms, I changed out the dry pad and put on a clean dry pad. I then started in my dining room, worked my way into the living room and finally ended up in the kitchen...all using this one pad! I love how this product is designed as I am able to get underneath the edges of furniture, tables, consoles, under chairs and all kinds of other places I normally couldn't reach.

Now it was time to mop...so I put the wet refill pad on and got busy! I first started in the kitchen, moved into the dining room & living room and finally finished up with the 2 bathrooms. Surprisingly...the wet pad stayed wet and was plenty moist for me to do all of those rooms on one pad!

My tiled floors and hardwood floors are all looking sparkling clean again and I love how easy it was to do! I didn't have to lug around a broom, dust pan, mop, bucket and all of that other nonsense to complete this cleaning task and using the Swiffer Sweeper & Mop made the job quick and easy! Yay!!!

This Swiffer Sweeper & Mop will always be in my cleaning arsenal of products from now on! It did a fabulous job cleaning all of my floors and I love that I just toss out the used pads and just purchase the refills when I need them. Strawberry Chili Pepper Popsicles Recipe


We love making homemade popsicles and while we do enjoy some of the classic flavors...we really like experimenting with the unusual ones. These popsicles are really easy to make and once made...about 3 to 4 hours of freezing time.

Now I will admit...these are not a favorite of mine at all...however, hubby makes them all of the time when his guy friends come over to hang out in his "man cave" and those boys eat them right up!!!

Strawberry Chili Pepper Popsicles Recipe

1 Popsicle Mold with 10 cavities
3 cups fresh strawberries, stems removed and sliced
2 cups water
1 to 2 chili peppers, finely diced
2 to 3 tablespoons granulated sugar


In a large blender container, combine together the sliced strawberries, water, diced chili peppers and the granulated sugar. Puree mixture until very smooth. Pour mixture into popsicle molds and freeze until firm.

Gardening - Can You Identify This Flowering Plant?


Back in January of 2013 we moved into our new home & have been working on our landscaping. We have been cleaning up the property, beautifying it and all kinds of other things. We have added brand new edging, two new bird baths, a new water fountain, an outdoor swing, 4 flower beds and a vegetable garden.

Well, last weekend I was down at the back of our property near the tree line and discovered this flowering bush aka plant. It's quite large if I must say so myself. Hubby weeded around it and it looks pretty healthy. The flowers are absolutely beautiful and we are enjoying our new found flowering plant or bush.

However, we don't know what kind of plant or bush that it is!!! Do any of you recognize this flower and if so, can you please tell us what it is? We do know that this flowering plant aka bush has been on the property for many years and blooms every Spring & Summer. We got that information from our neighbors but they don't know what it is either. I asked the previous home owner and she said she doesn't remember either and that her husband planted it for her about 9 years ago.

So, if you know what type of flower plant (bush) that this is...please leave me a comment! We are trying to learn more out about it. Thanks for your help!
